Herbed Salad with Goat Cheese and Almonds

Ingredients
  

  • Salad:
  • 6 cups spring greens with spinach
  • ¼ cup chopped Italian Parsley
  • 1 TBS chopped fresh thyme
  • 3 TBS chopped fresh Chives
  • Zest of one lemon preferably Meyer
  • Dressing:
  • Juice from one lemon preferably Meyer
  • 1/3 cup good quality olive oil
  • 2 TBS honey
  • Salt and pepper to taste
  • Garnish:
  • 2 ounces honey goat cheese crumbled
  • ½ cup sliced toasted almonds
  • Edible flowers optional

Instructions
 

  • In a large salad bowl, toss together the greens, Italian parsley, thyme, chives and lemon zest.
  • Shake or whisk all dressing ingredients and season with salt and pepper to taste.
  • Toss greens with enough dressing to lightly coat (you will have some dressing left over). Divide among 4 plates. Top each with goat cheese and almonds. Add edible flowers if desired. Serve immediately.
