Happy Spring!!! Can you believe it’s finally here? We won’t be celebrating Easter with extended family this year, but we will still be enjoying delicious food! Our Herbed Salad with Goat Cheese and Almonds is the perfect celebratory salad and a perfect welcome to springtime. It is the easiest salad that delivers big on flavor. The herbs add a taste of spring and the lemon honey dressing is bright and light. If you’re feeling a little “extra”, you can use Trader Joe’s Sliced Honey Roasted Almonds on top (one of our TJ favs!).

Herbs for Herbed Salad with Goat Cheese and Almonds

You can choose any assortment of herbs you like. We recommend thyme, Italian parsley and chives.

 

Herbed Salad with Goat Cheese and Almonds

Chop all of the herbs fairly finely and combine.

Toss the spring greens with the herbs and dressing.

Trader Joes Unsalted Dry Toasted Sliced Almonds are super convenient.
We really like honey goat cheese in this salad, but any goat cheese will do.

 

Herbed Salad with Goat Cheese and Almonds ready to eat

Portion the salad onto individual serving plates and top with goat cheese and almond.
You can add edible flowers for a beautiful spring presentation if desired.

 

Herbed Salad with Goat Cheese and Almonds

Prep Time 15 minutes

Servings 4

Ingredients
  

  • Salad:
  • 6 cups spring greens with spinach
  • ¼ cup chopped Italian Parsley
  • 1 TBS chopped fresh thyme
  • 3 TBS chopped fresh Chives
  • Zest of one lemon preferably Meyer
  • Dressing:
  • Juice from one lemon preferably Meyer
  • 1/3 cup good quality olive oil
  • 2 TBS honey
  • Salt and pepper to taste
  • Garnish:
  • 2 ounces honey goat cheese crumbled
  • ½ cup sliced toasted almonds
  • Edible flowers optional

Instructions
 

  • In a large salad bowl, toss together the greens, Italian parsley, thyme, chives and lemon zest.
  • Shake or whisk all dressing ingredients and season with salt and pepper to taste.
  • Toss greens with enough dressing to lightly coat (you will have some dressing left over). Divide among 4 plates. Top each with goat cheese and almonds. Add edible flowers if desired. Serve immediately.
