Grilled Corn Salad with Bacon and Feta

We are filled with sadness that corn season is coming to an end. We are finding lots of things to make with fresh corn before we have to resort to using the frozen kind. Our Grilled Corn Salad with Bacon and Feta is the perfect accompaniment for a backyard barbecue, a picnic, or as lunch or dinner all on its own.  It’s best with fresh corn. Don’t skip the step of grilling it…it really increases the depth of flavor. In a pinch, though, you could use Trader Joe’s frozen Fire Roasted corn. But whatever you do, do not leave out the bacon!

Grilled Corn Salad with Bacon and Feta

Ingredients
  

  • Salad:
  • 4 ears corn
  • 3 green onions
  • olive oil
  • Kosher salt
  • ¼ cup chopped fresh basil
  • 6 slices bacon cooked and crumbled
  • ¼ cup Feta cheese crumbled
  • Dressing:
  • 2 TBS olive oil
  • 1 TBS apple cider vinegar
  • 2 tsp honey
  • ½ tsp salt

Instructions
 

  • Preheat grill to medium-high heat. Remove husks and silks from corn. Rub the corn and the green onions with olive oil and sprinkle with salt. Place corn and green onions on the hottest part of the grill and cook until lightly charred on all sides. The green onions will take about 3-5 minutes total and the corn about 7-10 minutes. Remove from the grill and allow to cool enough to touch.
  • Using a sharp knife and standing the corn cobs up on end, cut the kernels off of each cob into a bowl. Chop the green onions and add to the bowl with the corn. Add the basil and toss to combine.
  • Whisk together all dressing ingredients. Drizzle over the corn, green onion and basil, tossing to coat (you may have dressing left over). Top with crumbled bacon and feta and serve at room temperature.
