Herbed Salad with Goat Cheese and Almonds

Ingredients
  

  • Salad:
  • 6 cups spring greens with spinach
  • ¼ cup chopped Italian Parsley
  • 1 TBS chopped fresh thyme
  • 3 TBS chopped fresh Chives
  • Zest of one lemon preferably Meyer
  • Dressing:
  • Juice from one lemon preferably Meyer
  • 1/3 cup good quality olive oil
  • 2 TBS honey
  • Salt and pepper to taste
  • Garnish:
  • 2 ounces honey goat cheese crumbled
  • ½ cup sliced toasted almonds
  • Edible flowers optional

Method
 

  1. In a large salad bowl, toss together the greens, Italian parsley, thyme, chives and lemon zest.
  2. Shake or whisk all dressing ingredients and season with salt and pepper to taste.
  3. Toss greens with enough dressing to lightly coat (you will have some dressing left over). Divide among 4 plates. Top each with goat cheese and almonds. Add edible flowers if desired. Serve immediately.
