Fast and Easy Mexican Style Shredded Chicken
Cinco de Mayo is next Tuesday! We will take any holiday (fake or real) and find a way to celebrate with food. Do you have party meal plans? We have a recipe for Fast and Easy Mexican Style Shredded Chicken that is perfect for your Cinco de Mayo meal. You can use it for tacos, enchiladas, nachos, taco salad….the possibilities are endless! Just three ingredients!
Pressure cook the chicken, chicken broth and taco seasoning for just 15 minutes.
Break up the chicken a bit after pressure cooking – it will continue to “shred” as it sautes.
After sauteeing for about 10 minutes, most of the liquid will have been absorbed, and you’re ready to go!

Fast and Easy Shredded Mexican Style Chicken
Ingredients
- 1 ½ - 2 lbs boneless skinless chicken thighs
- 1 cup chicken broth
- 4 tsp taco seasoning
Instructions
- Place the chicken thighs in multi-cooker. Pour the chicken broth over chicken and sprinkle with taco seasoning. Turn thighs to disperse seasoning in broth.
- Secure the pressure lid and pressure cook on high for 15 minutes. Quick release the steam.
- Use a pair of tings to shred the chicken – it should fall apart easily. Don’t worry if there are some large chunks, they will separate as the chicken continues to cook.
- Set multi-cooker to sauté on high. Sauté the chicken, stirring frequently for about 10 minutes until the liquid is absorbed, but chicken is still moist.
- Serve with tortillas and your choice of accompaniments.
