Peanut Butter Mallow Bars
Who doesn’t love peanut butter?!? In celebration of National Peanut Butter Lover’s Day, we are sharing one of our favorite peanut butter cookie recipes. A very popular bar cookie from Jenn’s bakery, this one has a little of everything wonderful: peanut butter, chocolate, marshmallows, peanuts, crispy rice cereal. It’s a flavor and texture extravaganza!

Peanut Butter Mallow Bars
Base:
- 6 TBS (3 oz) unsalted butter, melted
- ½ cup (4 oz) light brown sugar
- ½ cup (4 oz) dark brown sugar
- ½ cup (4.5 oz) creamy peanut butter
- 1 egg
- 1 tsp vanilla
- 1 cup (4.5 oz) flour
- 1/8 tsp baking soda
- ¼ tsp baking powder
- ½ tsp salt
- 3 oz chopped salted peanuts
Preheat oven 350. Line a 9” x 13”pan with foil and lightly spray with cooking spray. Whisk together flour, soda, powder and salt in a small bowl and set aside. Beat butter, brown sugar and peanut butter well, about 1 minute. Beat in egg and vanilla. Stir in flour mixture until just combined. Stir in peanuts. Press into bottom of prepared pan and bake for about 15 minutes until light brown.
Filling:
- 10 oz gourmet vanilla bean marshmallows cut in half
Top warm base evenly with marshmallow pieces. Place in oven to just melt about 2-3 minutes. Let cool completely before topping.
Topping:
- 10 oz milk chocolate
- ¾ cup (7 oz) creamy peanut butter
- 1 ½ cups (1.5 oz) Rice Krispies
Melt chocolate and peanut butter on top of double boiler until smooth. Remove from heat and stir in Rice Krispies. Spread evenly over marshmallow layer. Cool completely before cutting into bars. Store tightly covered in refrigerator for up to one month – bring to room temperature before serving.
Makes about 40 bars
