Mom’s Favorite Coffee Cake

Childhood food memories…we all have them, don’t we? Those special treats or meals our moms (or dads or grandparents) used to make that have a special place in our hearts and our bellies.

Our mom is an excellent cook. There are many things she made for us growing up that we fondly recreate to this day. This coffee cake is one of those recipes. Mom made this in many different versions – including one time with currants. That’s a funny story, about the currants. Just make sure if you add currants to your cake, everyone at your table likes them. They are very time-consuming to pick out of the cake, as we witnessed with one of our high school friends 😉 Our favorite version remains the simple streusel topped cake in the recipe below.

This cake is best served while still warm.  Make it to celebrate National Coffee Cake Day this Saturday, April 7th!

Mom’s Favorite Coffee Cake

Topping:

  • 1/3 cup (2.7 oz) light brown sugar
  • ¼ cup (1.5 oz) all purpose flour
  • ½ tsp cinnamon
  • 3 TBS (1.5 oz) salted butter

Cake:

  • 1 ½ cups (6.75 oz) flour
  • ¾ cup (5.25 oz) granulated sugar
  • 2 ½ tsp baking powder
  • ¾ tsp salt
  • ¼ cup (1.7 oz)shortening
  • 1/3 cup (2.8 oz) sour cream
  • ½ cup (4 oz) milk
  • 1 large egg

Preheat oven to 375. Lightly grease an 8” square or round pan.

Topping:
In a small bowl, mix together the brown sugar, flour and cinnamon. Cut the butter into small pieces and mix in using a fork. The mixture should be crumbly.

Cake:
In the bowl of a stand mixer with the paddle attachment, combine the flour, sugar, powder and salt. Add the shortening, sour cream, milk and egg and mix on medium speed for about 2-3 minutes, scraping down sides of bowl with spatula as needed. Pour into prepared baking pan and smooth the top. Evenly distribute the topping over the batter. Bake for 25-30 minutes until set and toothpick inserted into center of the cake comes out with a few moist crumbs. Let cook 10 minutes before serving.
