Our Favorite Meatloaf

We’ve always loved a good meatloaf but it’s hard to find a really good meatloaf recipe. Too many green bell peppers and who puts celery in meatloaf, anyway? When Jenni of Gnome Lover, one of our all-time favorite bloggers, posted a meatloaf muffin (!) recipe back in 2014, we were so delighted. It’s now our favorite meatloaf recipe.

Well, as time goes on and the kids get older (and hungrier) it seems the muffins aren’t enough. So we doubled her recipe and put it in a traditional meatloaf pan. Not a lot of crazy veggies in her recipe just a simple, straightforward and incredibly tasty meatloaf. You have to try it.

Sadly, Jenni stopped posting in early 2015. We miss her many talents: cooking, shopping, humor, style, writing. Her little slice of the internet is still out there and is a wonderful place to visit. Her wonderful meatloaf recipe lives on in our kitchens.

Meatloaf

  • 1 pound ground pork
  • 1 pound of lean ground beef (95/5 or 93/7)
  • ½ tsp salt
  • ½ cup dried Italian bread crumbs
  • 2 eggs
  • ½ cup diced onions cooked sautéed in 4 TBSP butter
  • Pinch chili flakes
  • ¼ cup of Red Pepper Spread (any kind will do)
  • 2 tsp Worcestershire sauce
  • 2 cloves of minced garlic (sautéed at the last minute with the onions)
  • ½ cup chili sauce

Preheat oven to 350˚ F.

Melt the butter in a small frying pan over medium high heat. Add the onion and sauté for 6 minutes. Add the garlic and sauté one minute longer. Place the onions in the bottom of a large bowl and let cool for 5 minutes.

When the onions are cool enough to handle, add the pork, ground beef, salt, bread crumbs, eggs, chili flakes, red pepper spread and Worcestershire. Mix with your hands until everything is incorporated. Be careful not to over mix.

Place the mixture in a meatloaf (or loaf) pan and gently pat to fit pan. Top with chili sauce and place in the oven. Cook for 1 hour and 15 minutes. Remove from oven and enjoy!
