Ice Cream Pie

Father’s Day is fast approaching and we thought we’d share an easy and delightful Ice Cream Pie that can be customized to fit your particular father figure tastes. Because who doesn’t love ice cream pie in the summertime?

We love the combination of chocolate crust, peanut butter ice cream and peanut butter cups. The recipe for the chocolate crust is below and the recipe for our delicious peanut butter ice cream can be found here. If you’re not a peanut butter fan, you could also make one of the combinations below. Feel free to use one quart of store-bought ice cream in place of homemade…just let it soften a bit before putting it in the crust.

Mint Pie

  • Oreo cookie crust (recipe here)…mint Oreos would make a delicious crust for this pie!
  • Mint ice cream
  • York Peppermint Patties roughly chopped

S’Mores Pie

  • Graham cracker crust (recipe here)
  • Toasted marshmallow ice cream (recipe here)
  • Milk Chocolate candy bars, roughly chopped

Strawberry Pie

  • Chocolate Crust (recipe below)
  • Strawberry ice cream
  • Sliced Strawberries
  • Balsamic syrup drizzle (optional)

Coffee Pie

  • Chocolate Crust (recipe below)
  • Coffee Ice Cream
  • Heath or Skor bars, roughly chopped

Vanilla Pie

  • Chocolate Crust (recipe below)
  • Vanilla Ice Cream
  • Your favorite candy bar, roughly chopped

Ice Cream Pie ingredients

 

Cookie crumbs

Process chocolate wafers to a fine crumb.

 

Crust mixture

Mix in the melted butter until evenly distributed.

 

Ice cream pie pressing crust

Press into a 9″ pie pan, using a small measuring cup to help compact and press the crumbs evenly up the sides.

 

Ice cream pie topping

Cut the peanut butter cups into eights.

 

Fill the pie

Spread softened ice cream into formed crust and top with peanut butter cups pieces.

 

Drizzle the chocolate sauce

Drizzle on a bit of chocolate sauce, freeze and enjoy!

Ingredients
  

  • Chocolate Crust:
  • 30 Famous Chocolate Wafers 8oz
  • 6 TBSP melted unsalted butter
  • 3 TBSP white sugar
  • Filling:
  • 1 quart peanut butter ice cream
  • Topping:
  • Roughly chopped dark chocolate peanut butter cups
  • Chocolate sauce for drizzling

Instructions
 

  • Break up chocolate wafers and place in food processor. Process until they look fine sand. Add the sugar and pulse until thoroughly combined.
  • Place mixture in a large bowl and stir in melted butter until the mixture resembles wet sand.
  • Pour into a 9” pie pan and gently press the crumb mixture on the bottom and up the sides of the pan, making sure the crust is uniformly thick. We use a metal measuring cup to gently press the crust into the bottom and sides of them pan. Set aside.
  • Place ice cream into into prepared crust and smooth out with a spatula. Top with chopped peanut butter cups. Drizzle with chocolate sauce.
  • Freeze for a minimum of 4 hours, preferably overnight.
